little things of christmas Advent Calendar : day 14 "homemade ginger biscuits"!

























mmmmmm homemade ginger biscuits - not only do they taste good, more importantly they make the whole house smell AMAZING!
Below is the recipe I use:
125g unsalted butter
90g brown sugar
3 tbsp molasses / treacle
1 egg, beaten
370g plain flour, sifted
1 tsp baking soda
1/2 tsp salt
1 tbsp ground ginger
1 tsbp ground cinnamon
1 tbsp ground mixed spice

Mix it all up together- I sure you should be really careful or something- but I'm not bung it together, then wrap it in cling film, and put in the fridge for at least half an hour - this will help make it manageable.
Then when its ready, pre heat oven to 180 degrees and roll out mixture and cut in to shapes, put in the oven for 10-15 mins- keep checking, they should be a bit squidgy.
And hey presto biscuits for you to eat/ or give as presents- hurrah!

  2. This is very similar to a Norwegian recipe I use - called "syrupsnipper". You're right it aromas the whole house and it's also great to make them with kids - even nearly-2 year olds!!
